Irish potato cake
One of the great things about growing your own potatoes is potato cake!
My grandma moved from Ireland back just after the start of the last century...early 1900s, she made this recipe often, She said it was very popular in Ireland.
Very easy to make from mashed potatoes, but strangely if you have none , powdered mash potato works very very well as well.
Simple ,
500g of cooked hot mashed potato, or reconstituted powdered mash
50g to 100g of flour, white flour or brown flour, just enough to mix to a soft dough, I use a low flour amount but its harder to turn over when cooking.
50g of butter or margarine,
10g of salt...you could reduce this and add onion powder or paprika to reduce salt levels
a big pinch of black pepper
Add the butter salt and pepper to the potatoes , stir in the flour until you get a uniform soft sticky dough.
Heat a frying pan on the hob no oil..., sprinkle a bit of flour , add the dough, squash it down until flat I make it about 10mm thick, turn heat down low so it cooks through for about 10 minutes, if you want you can put baking paper in the pan to make it easier to get out, i use flower for the 1st side and paper or foil for the other side
Add a piece of baking paper to the top, rub it flat, turn the pan over and tip it out on to a board, then slide back in paper side into the pan, leave to cook another 5 or 10 minutes on low power,
Check its browned...and when it is its cooked
